Preparation time: 1h30 (serves 4)
Ingredients:
1 whole frozen chicken (thawed beforehand)
2 lemons
4 garlic cloves
3 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
2 teaspoons of dried herbs (thyme, rosemary, or a herb mix)
Fresh rosemary or parsley (optional, for garnish)
Method:
Preheat the oven to 200 ºC.
Place the chicken in a roasting dish.
In a bowl, mix the olive oil, salt, pepper, chopped garlic and dried herbs.
Cut the lemons in half. Squeeze the juice of one lemon over the chicken and place the squeezed halves inside the cavity.
Brush the chicken all over with the herb and oil mixture.
Roast for about 1h15 to 1h30, basting occasionally with the juices from the pan.
When the skin is golden and crisp and the juices run clear, the chicken is done.
Remove from oven and let rest for 10 minutes before carving.
Tip:
Serve with roast potatoes, white rice or sautéed vegetables for a complete and balanced meal.
