Preparation time: 45 mins (serves 4)

Ingredients:
300 g frozen shrimp (peeled)
1 pack of seafood rice mix
250 g long-grain or medium rice
1 medium onion, chopped
2 garlic cloves, minced
1 bay leaf
3 tablespoons of tomato paste
1/2 red bell pepper, sliced
3 tablespoons of olive oil
1 litre seafood stock (or hot water)
Fresh coriander, chopped (optional)
Salt and pepper to taste

Method:
In a large pot, heat the olive oil and sauté the onion, garlic, and bay leaf until the onion is soft and translucent.
Add the tomato paste and red pepper. Cook for a few minutes.
Add the seafood rice mix and the frozen shrimp. Stir well.
Add the rice and pour in the hot seafood stock. Stir, season with salt and pepper, and cook over medium heat for about 15–18 minutes, until the rice is cooked but still slightly creamy.
Adjust seasoning and, if desired, sprinkle with chopped coriander before serving.

Tip:
Serve immediately while still moist, to preserve the texture of the rice.
You can also add mussels, clams, or crab sticks to enrich the dish.
